Corn syrup is a food syrup which is made from the starch of corn or maize and contains varying amounts of maltose and higher oligosaccharides, depending on the grade. Corn syrup, also known as glucose syrup, is used in foods to soften texture, add volume, prevent crystallization of sugar, and enhance flavor. Corn syrup is distinct from high-fructose corn syrup (HFCS), which is manufactured from corn syrup by converting a large proportion of its glucose into fructose using the enzyme D-xylose isomerase, thus producing a sweeter compound due to higher levels of fructose. Corn syrup's major uses in commercially prepared foods are as a thickener, a sweetener, and as a humectant – an ingredient that retains moisture and thus maintains a food's freshness.

Corn syrup solids are made from concentrating corn syrup to less than 10 percent water. Also, the glucose content of the syrup must be at least 88 percent by weight to qualify as a corn syrup solid. Corn syrup solids are used to make foods that would be hard to make with liquid sweeteners, such as powdered coffee creamers, powdered drink mixes and dry baby formula. It is also used in processed foods that need thickness and texture, and it is used as an ingredient to conceal unpleasant flavors in pharmaceuticals. Corn syrup solids, (C6H10O5)n-H2O, CAS Reg. No. 68131-37-3, are defined by the USA FDA as dried glucose syrup (21 CFR 168.121) in which the reducing sugar content is 20 DE or higher. Corn syrup solids are generally recognized as safe (GRAS) as direct human food ingredients at levels consistent with current good manufacturing practices.
